I'm a game designer that's been playing tabletop games since the early '00s. Most of my experience is with the D&D 3/3.5/Pathfinder ruleset, but I've bee branching out more in the past few years.

It may not need to be moving, but my (albeit limited) research leads me to believe that moving water is the normal state of things for most sharks. It doesn't really matter for the practical purposes of this answer. Do you think I should remove that line?

Well, the ground is certainly touching the shark as it's walking, so at the very least you will be leaving a trail of salty water wherever you go.

Yup. For a shark, it's probably moving water, so you're likely going to get everything around it wet.
