Being glued to the floor by webs would probably be restrained, not immobilized. Also, D&D 4e is a game system before a fantasy combat simulator, so conditions are primarily given value in terms of game function. There are often "softer" versions of most penalties (eg: slowed -> immobilized -> restrained, dazed -> stunned -> unconscious) with varying degrees of in-game effect balanced on game function before "reality simulation."

Note that there is a feat, Vicious Advantage, that lets you gain combat advantage against enemies that are slowed or immobilized.

"Please help! I'm worried the players are as bored as I am with the drawn-out combat encounters!" If they're showing up each week to play, they're probably not bored ;) They may really truly enjoy soundly defeating monsters. It's like how people play games with cheat codes to win every time. Sometimes the challenge of setting up a guaranteed win and seeing it play out is the fun of the game.

Also, quick point, monsters have 1 healing surge per tier. So level 1-10 monsters have 1 surge, 11-20 monsters have 2 surges, and 30+ monsters have 3 surges.

I suppose one answer is that, unless the crossbow has the versatile property, you can't use the versatile mechanics with it. More precisely, versatile weapons can be USED with two hands, but you're still technically only wielding them with one hand, so wield-related actions don't apply to the transition between both states. A discussion on Swordmages seems to suggest they can indeed use their versatile swords with two hands for the bonus damage and maintain all their defensive benefits for a free hand, EXCEPT during the attack (eg: immediate interrupt, OA).
