From the rule on Extra Attack:

> you can attack twice, instead of once, whenever you take the Attack
> action on your turn.

From the rule on the Ready action:

> Sometimes you want to get the jump on a foe or wait for a particular
> circumstance before you act. To do so, you can take the Ready action
> on your turn, which lets you act using your reaction before the start
> of your next turn.

So when you Ready an attack, you take the Ready action on your turn, not the Attack action, so the Extra Attack does not apply. It doesn't say "whenever you attack on your turn". It says "whenever you take the Attack action on your turn", which has a specific mechanical meaning.

Here's another example to illustrate the same point:

 1. Creature A takes the Ready action on its turn, to move 30 feet in response to creature B moving.
 2. Creature B moves in such a way that A's readied move takes them past creature B, provoking an opportunity attack from B _on B's turn_.
 3. Creature B uses its reaction to make an attack of opportunity.

In this scenario, creature B does not get an Extra Attack, since it is not taking the Attack Action on its turn, but attacking using a reaction.
