The only things that appear to be explicitely described as possible are moving the illusion and producing sound. Nothing in the description could even be implicitely interpreted as permitting other actions, and thus should not be permitted according to RAW. If individual DMs prefer to use "Rule of Cool", that's entirely their prerogative, and I have absolutely nothing against it. | |

Dodging attacks doesn't seem to be within the possibilities of this spell. On the other hand, Project Image and Mislead both allow you to make the illusion "behave in whatever way you choose", which should include more complex actions such as dodging attacks. | |

Like you said, once the NPC hits the illusion, it will be revealed as such. The only way to control when this happens is to let the illusion be hit on purpose. Otherwise, you are at the mercy of the NPC's accuracy. If the monk manages to hide from the NPC before casting Project Image, it should work just fine. Mislead also turns the monk invisible, making it a bit easier to perform. How does that not achieve the desired results? | |
